Hi i'm Lisa. Welcome to another episode of HomeMade Healthy.
Today we're making an easy coconut pie. You can whip it up in about five minutes.
It takes about an hour in the oven,
but the nice thing is even people who aren't paleo or low-carb
or grain free don't even know. This tastes really good.
So we'll start with for eggs. I use the cage free.
And when you work with things
with coconut oil or coconut milk,
it tends to harden when it added to cold ingredients. So
if you can have your eggs at room temperature, that makes it
work a little bit better.
Okay, we're just going to whisk this up.
And it's just to get them incorporated. Then we're gonna
add a cup of shredded
coconut. And I use Bob's Red Mill.
And
one can of coconut milk. Don't buy the lite.
Make sure you get the regular coconut milk. Trader Joe's has coconut cream,
which is my favorite. We use it and go through about six cans a week
around here.
You've gotta scrape every bit of that yummy goodness.
I love cooking this way. My family doesn't feel like they're missing out on
anything. I don't have to worry about all the additive and chemicals in
the things that they're eating. Butter melted. Coconut oil would work as
well.
Then you'd have all the different coconut products.
A tablespoon of vanilla. A quarter cup
of coconut flour. So now I have coconut milk, coconut flour, and shredded coconut.
It's gonna be pretty yummy!
And then stevia.
I use Cal stevia. It's not got a bitter aftertaste. Its really
good.
And you're going to use a quarter teaspoon.
Okay and we're just gonna mix all of this together
just until it's well incorporated.
And then I sprayed a 9-inch pie plate,
tah-dah, with some
just cooking oil spray. You can do butter in there
or put coconut oil in there
to make sure it doesn't stick on you.
Okay we've got it all mixed together.
Now wer're gonna poured it into the pie plate
Just like this. I'm actual taking this to a barbecue tomorrow.
So there's girl I work with that wants to start the low carb paleo lifestyle.
So I can introduce her with this recipe. Which is wonderful.
So now this is gonna go in an
oven at 350 degrees for about an hour. it's been about an hour so we're going

Oh it smells soooo delicious!
Look at that. So you should probably wait
about 10 minutes before cutting it but I'm pretty impatient so.
It's kinda like a custard.
Alright, so it's not gonna look beautiful.
But its done perfectly.

This is so good. It's...
like a coconut bread. Its got the little coconut bits in it. It's delicious.
