Today on the show we will be making vegan crab cakes featuring hearts of palm. Here we go.
Vegan Crab Cakes Recipe with Hearts of Palm
We are going to start this recipe by adding drained and towel dried hearts of palm to a food processor.
You should be able to find hearts of palm in your local grocery store next to the artichoke hearts.
And if your grocer does not carry artichoke hearts, then they probably don't have hearts of palm
and you can order them online.
After you add the hearts of palm to the food processor, churn them up until they are the consistency of crab meat.
You say, "Well I don't eat crab, what does it look like?"
You will just know, it will be like little shreds. Little little shreds.
Crumble up a few snack nori strips into a bowl.
Add in your hearts of palm, along with onion, vegan mayonnaise, old bay seasoning,
cornstarch, salt, black pepper, and panko bread crumbs.
Stir those all together until they start to stick and then refrigerate mixture for 30 minutes, covered.
Heat a skillet over medium high heat and add in vegetable oil.
Form your vegan crab cakes out of the refrigerated mixture and cook them for about 3 minutes on each side.
For texture, this recipe did really well. Crab cakes are pretty easy to mimic.
It is like a cake-y thing with stuff mixed in. Some restaurant don't put much crab in theirs,
some put a whole bunch. So the texture was easily accomplished and I give that an A+.
Some notes of the crab flavor it heat head on and other notes it missed out.
I don't know which one it got and which one it didn't, but over all pretty good.
I think it made a good imitation crab cake.
