Hi guys, I'm Caroline and I'm Alejandra and today we're making Peanut Butter Pasta Primavera.
And actually I've already started cooking the pasta. It's really simple. These ingredients
are available pretty much all year round. So it's a great week night pasta. We have
some broccoli. Frozen or fresh is fine. We have some bell pepper, any color that's your
favorite. We have some zucchini. Frozen peas. A carrot that's been shredded with a vegetable
peeler. And for the sauce we have garlic, scallions, fresh lemon juice, and my favorite
Old Fashioned Smooth peanut butter. And we've got a bunch of fresh herbs. Some cilantro,
fresh basil, and some chives. We already have our pasta that's already been cooking. This
is some fettucine. And what's super cool about this recipe is that we actually just drop
a bunch of the vegetables into the pasta water. Give it a little toss so they don't stick
together. I love that they just cook right along with the pasta. Yea. So we're almost
ready to drop these vegetables. It's been eight, nine minutes. Somewhere around there
depending on your pasta. So I'm going to add this broccoli first. If you want to toss in
that bell pepper you can. I do. And some of the zucchini. This is going to cook for a
couple of minutes. And actually while we're waiting for this to cook and we go ahead and
start our sauce. Good, what do we do? So let's start off with some Old Fashioned Smooth peanut
butter. Ooo, yes, nice. Nice spoonful. And then we're going to add some lemon juice.
Okay. A nice little bit of olive oil, a couple tablespoons. And we're going to add some fresh
garlic. Dump it on in. Perfect. Scallions. We're just going to stir all of that together.
Then what we're going to do is one of my favorite tricks. We're going to save some of this pasta
water that I am going to use a little bit later which is such a great trick because
the starch from the pasta actually thickens when you toss it with the pasta. Nice. Creates
a nice creamy sauce without dairy. Yea. Exactly. It's vegan, it's amazing. So we're about ready
to drop the rest of our veggies in this hot water. We've got some frozen peas, very very
quick cooking. And some peeled carrots. You just keep peeling with that vegetable peeler
to get that shape. We're going to stir it in. And I am going to save some of this pasta
water like I said. So all I do is take this heat proof measuring cup. Save just a little
bit. Its okay if you have a couple of stray peas. that's totally fine. And actually we're
ready to drain. So we've got out cooked pasta and the vegetables, our sauce that's ready
to go. I'm actually going to pour in a little bit of this pasta water so that we get a nice
thin sauce. Yea if you just whisk away. The warmth of the pasta water also helps bring
it all together. Alright there we go. Perfect so I'm just going to add all of our pasta
and veggies. Gorgeous. There you go. Toss it with our tongs and always its important
season it with salt and pepper. Beautiful dish. Thank you and as we toss it together
maybe add a bit more pasta water to thin it down. Because you know the hot pasta is going
to soak all this flavor right up really quickly. This is how we're getting this nice creamy
sauce. And then you know what. If you want to go ahead and add some of those herbs that
would be lovely. Cilantro and some chives. Amazing flavors here. And some basil. You
know its pasta primavera so we're focusing on fresh flavors. We've got the nice notes
of the lemon juice and the olive oil. If you have other favorite herbs that would be completely
fine to. Time to plate it up. Alrighty. A little bit of zucchini in there. Don't want
to skimp on the vegetables. Nice colors and flavors here. Gorgeous. So there you have
it Peanut Butter Pasta Primavera. Give it a taste. Alright! So fresh right? It's delicious,
I know. I love the fresh herbs in it but it has a tiny bit of nuttiness from the peanut
butter. We used peanut butter and pasta to make an Italian inspired noodle dish. What
