Hi, I'm Anne Mooney, I'm a personal chef in Orlando and Winter Park, Florida and I'm here
today on behalf of Expert Village to talk about beer can chicken. Now what we have here
is plain old chicken from the grocery store, which I've brined overnight and then rubbed
with olive oil and an herb rub. It's actually paprika, salt and pepper, and we are now going
to prepare to put this chicken on the beer can; hence the name of the dish. Now, as you
can see I'm using here a can of Budweiser beer. You can use any cheap beer as long as
it is in a can this size, just the normal old beer can. And what you do is open up the
can and pour about the top 1/4 out of the can. Because what you want to have happen
on the grill if for the beer to steam and it will steam and add moisture to this chicken.
So, any kind of beer will do as long as it is just plain old American beer, don't spend
a lot of money on it. Now, we're just about ready to up end this chicken. And you will
see that this chicken fits magically right on to this beer. The size of chicken you want
to use for this is between 3 and 4 pounds. Don't get anything bigger than 4 pounds. So,
here we have the chicken suspended on this beer can. We're going to put him in a pan
like that, tuck his wing back in, and the next step is to put him on the grill.
