Hey kids, my name is Crista Huxel.
I'm a graduate dietetics student at Eastern Illinois University.
Most children do not consume a well-balanced diet high in
fruits, vegetables, dairy, or products high in fiber.
Some kids may think healthy foods may look funny,
smell yucky, or even taste horrible.
However, they don't have to.
Today, I'm going to demonstrate how to make
one of your favorite foods healthy by
incorporating more healthy ingredients into it.
And the product I'm going to make today is mac and cheese.
So grab your parent, and let's get cooking.
These are the ingredients that you're going to need today.
You'll need 1 1/2 cups of large macaroni noodles
that I already prepared.
A good option would be to use whole grain noodles.
You'll also need 3/4 cup of non-fat milk, a 1/2 cup of white
beans, 1 1/2 to 2 cups of reduced-fat shredded
cheddar cheese or any other cheese that you would prefer,
and a 1/2 cup of pureed butternut squash.
I would probably have your parent prepare this ingredient.
So let's get started.
The first thing that you want to do is to add the milk
into a blender or a food processor along with
your 1/2 cup of white beans.
You will want to blend this until it becomes smooth.

You'll then take your milk and bean mixture and cook it
in a saucepan for about one to two minutes.
The next step will be to add your cheese,
and your butternut squash puree.
You'll stir this mixture until the cheese is melted
and all the ingredients are well-blended.
Once the mixture is well-blended and heated through, you will add
your already precooked noodles.
You'll want to stir until the cheese evenly coats
every single noodle.
