Hey my Sweet Vs, it's The Sweetest Vegan here. Today we will be doing some culinary adventuring.
We will be making a vegan Juicy Lucy.
Now a Juicy Lucy, anybody who is a foodie, or lives where they make Juicy Lucys, or watches the Food Network,
or The Travel Channel or anything, you know that it is a cheese stuffed hamburger.
With the cheese on the inside of the hamburger. Like what dreams are made of basically. So lets get started on the recipe.
Vegan Juicy Lucy Recipe
First we are going to make our cheese sauce.
To the blender we are going to add cannellini beans, nutritional yeast, cooked sweet potato,
soy sauce, garlic powder, black pepper, canola oil, tahini, agave, and at the last minute I decided to
add in this yellow bell pepper that I had in the refrigerator.
Now at first my blender wouldn't blend it and I thought it was because the cheese mix was so think,
so I went ahead and added in my almond milk which I usually save for the end.
And it went ahead and it started, but then I saw that it was on low instead of high for blender and it was just
on something else. So blend it all together is the point. Blend it, blend it, blend it.
You want to make sure that everything is well incorporated and finely pureed.
Next we are going to make our simple black bean hamburgers. Preheat your oven to 400 degrees F.
To a large bowl you are going to add in one can of well rinsed and drained black beans.
To that we are going to add in ketchup, mustard, garlic powder, and onion powder.
I guess you can add a little bit of salt, but I didn't even think to add a little salt, and I didn't miss it either.
So matter of fact, don't add the salt. Use a potato masher to mash it up.
You want to still see some fragments of black beans, but for the most part, you want it to be all mush.
Add quick cooking oats, just to thicken it up and stabilize the mixture.
Then divide it into four equal segments and pat them into round patties.
I am going to cup one of the patties in my hand and then carefully add in our cheese sauce.
I used about one tablespoon to two tablespoons, just depending on how big you patties are
Then carefully slap another pattie on top of it and seal the edges.
Repeat this and I was only able to make two burgers, but repeat this for however many burgers you have.
Place them on a parchment lined baking sheet and bake them for 20 minutes.
10 minutes on one side, then carefully flip them over midway through to bake 10 minutes on the other side.
Now we are ready to place our burgers on a sprouted whole wheat bun. You can leave it like it is, or
you can add tomato and lettuce to top.
This burger turned out really really good and as with any cheeseburger or Juicy Lucy,
I just don't think you can ever get enough cheese.
Like oh my goodness, I need a cheese dipping sauce. The cheese is so good with the black bean burger.
It's so savory and it is so hearty and it is just really stands up to that sprouted whole wheat bun.
And it makes me feel really good about my cooking skills. Like it is really good for my self esteem this burger.
