Hi I'm Jennifer Cail and on behalf of Expert Village I'm going to show you how to make
this rich fudge. Our next step is going to be turning on the heat. We want to have a
low medium flame and we are going to heat our sugar dairy espresso mixture until the
sugar has all been dissolved. Right now it is a lovely gooey mess. So let the butter
melt so you want to have this relatively low temperature to begin with before we heat up
more for cooking. So we are going to keep stirring, it is important to stir it a lot
while you are making your fudge. You don't ever want it to be a time where you risk having
things collect at the bottom of the stove or the pot because you don't want things to
burn. By keeping things in motion constantly you are also going to dissipate the heat more
evenly. So things suck as your butter is going to melt a little bit faster cause they are
getting heated up more evenly. It is important for fudge making you really want to keep your
eye on the pot at all times. So we are going to let this heat up until the butter is melted
and then come back to it for out next step.
