Today we are going to make lobhiya ki phali aloo ki sabzi. This dish is very tasty.
So let's start making lobhiya ki phali aloo ki sabzi.
250 grams fresh cluster beans (phali)
250 gram or 2 big potatoes (aloo)
2-3 tbsp oil
2-3 tbsp coriander finely chopped (dhaniya)
1 small tsp ginger paste (adrak) or 1 inch sliced piece of ginger
2 green chilly (hari mirch) finely chopped
1 pinch asafoetida (hing)
½ pinch tsp cumin seeds (jeera)
¼ tsp dried mango powder (amchoor)
¼ tsp red chilli powder (lal mirch)
¼ tsp turmeric powder (haldi)
1 tsp coriander powder (dhaniya)
¾ tsp salt (namak) or as per taste.
To make this dish, we will first cut the cluster beans and ready them.
One by one we will cut the end part of each cluster bean.
We have to cut it, once it has been washed and dried.
These are very soft,dry beans.
If the beans have ripened and you are not able to cut them, then peel them and take out the seeds.
Hold some beans together in a proper way and cut them ½ centimeter in length.
Cut all the beans in this way and make it ready for use.
Take washed and dried potatoes. Now peel the potatoes using a peeler.
After peeling, wash the potatoes once again. Cut the potatoes in medium size.
Heat the pan. Add 2 tbsp oil to the pan.
Once the oil gets hot, add cumin seeds and mix.
Add asafetida, turmeric powder, coriander powder, green chilli and ginger paste. Mix well till the spices get a little roasted.
Now add chopped potatoes and cluster beans to the pan.
Add salt and red chilli. Keep stirring the dish for about 2-3 minutes
till the time the taste of all spices gets mixed into the dish.
All the spices are mixed thoroughly. Now add 3-4 tbsp water to the pan.
Cover the dish and cook it on low flame for 5 minutes and check.
5 minutes are over so now check.
It is very important to keep checking and stirring any dish in between because all the spices settle down at the bottom of the pan.
So it's important that we keep stirring all the ingredients after every 3-4 minutes.
You can add more water in the dish if you feel so and cook it for some more time.
Check the dish by removing the cover after every 4-5 minutes.
We can press the potato and check if our dish is ready.
If the potato is soft enough and breaking then our dish is ready and we need not cook anymore.
On medium flame, tasty dishes are prepared.
Add dried mango powder and green coriander leaves on top of the dish.
If you like to eat less spicy food, then do not add garam masala (spices mixture).
But if you like spicy food then at this point, add garam masala along with dried mango powder on the top.
Take out the dish in a bowl.
Garnish the dish with coriander leaves.
Lobhiya ki phali aloo ki sabzi is now ready to be served.
