Hello and welcome to Cupcake Addiction's Cheesecake in an Easter Egg Tutorial.
I saw this fantastic idea on a Sydney blog, Raspberri Cupcakes, and I thought what a fantastic
way to use up any leftover Easter eggs. So this is my version on their fantastic idea.
Tools and equipment that we will be using today:
I have my leftover Easter eggs. And I've just cut a standard egg carton in
half so that I've got somewhere to display them all.
I have 2 standard just sandwich bags or zip lock bags.
I have a serrated edge knife. A pair of normal kitchen scissors.
Two spoons. I have decided to go with lemon cheesecake
so I've got my lemon cheesecake mixture here. I've used a recipe which I'll post in the
comments of this tutorial. Otherwise, you can obviously use your own recipe. You don't
have to necessarily use lemon cheesecake. You could use a white chocolate mousse. You
could use another flavor cheesecake. But just bear in mind that you want that yolk to be
yellow so I've gone with lemon because obviously my lemon curd is going to be that nice yellow
for the yolk. You could also use something like a mango or a [passion] fruit. As mentioned,
I've also got some lemon curd there. You don't need terribly much of the lemon curd. I've
used a store bought lemon curd [if] you cannot also make your own. But as I mentioned you
don't need very much so just bear that in mind.
So let's get started. We're going to take our Easter egg. What I'm
going to do is just unwrap the top section. You don't want to rip off that nice wrapping
away. You just want to push it down to about a third of the way down the egg. And then
I'll just fold it over some of the little bits. You want to see a bit of that silver
and a bit of that blue color. Then I'm going to take this serrated edge knife. Do make
sure that it's a serrated edge knife because that's going to help you into that chocolate
without actually cracking the entire egg. Make sure you've got a couple of spares for
just in case. For a nice sort of, I suppose a smooth cut there, a very rigid looking cut.
So what we want to do is... I just want to pull of a couple of little bits and pieces
to make it look a bit haphazard like a chicken's pop out of it or something. Alright, so that's
what I've got. So you do that to all of your eggs.
Now we're going to take our snap lock bag and I'm going to spoon in some of this cheesecake
mixture. Now the reason that I'm doing this is so that I don't end up with cheesecake
all over the outside of the egg. You really want to keep that nice white cheesecake just
inside the egg which will add to the overall nice neat finish.
Now with that snap lock bag, I'm just going to use my finger, my thumb just to hold the
cheesecake down at the end of it. And I'm going to cut a nice piece off the end. Alright,
so that's popping out the end of the bag there, that cheesecake mixture. I'm going to tilt
it like this until I'm ready to actually place it into the egg to stop it from dripping.
And I'm going to take our egg and I'm going to fill it with this mixture 'til it's about
¾ of the way full. Alright, give it a little shake just to level it out. And then pop that
back into your container. See if I got enough cheesecake mixture here
to do another one. So once again, we're just letting that... just squeezing that cheesecake
out into the egg. That's about ¾ of the way full. Giving it a little shake. Beautiful!
You do that to all of your eggs. Now I'm going to take my other snap lock bag.
Open it up. Now put in some of that lemon curd, just a little bit of a lemon curd. It's
just going to make a nice yolk. So I'm just going to snip a slightly smaller amount off
the then of that. That little bag... and position the curd at the end of the bag again. Now
for this one, you just want to... You can see there, I'm just going to pipe it in a
nice little round circle and then just give it a little shake just to spread it out a
little bit like a natural egg yolk. Alright, once again, it doesn't have to be
in the very center because of course eggs aren't. So there we go.
Now they're going into the refrigerator for about an hour to set.
And there you have your finished product. I've got a couple more to go there. I think
you'll agree with me that's a fantastic way to use that leftover Easter eggs, an absolutely
