Today we’re cooking prime rib. I’m gonna show you how easy it is to cook a whole ribeye
using the Seco Select ComboChef. The rub that we’re gonna use today is made up of ancho
chili powder, dry mustard, coriander, brown sugar, and ground espresso coffee. So let’s
go ahead and throw together our coffee chili rub. Make sure to cover the entire surface
of the meat. And we’re gonna let this set for about 10 minutes while we prep the oven.

Now that the oven is prepped, it’s ready for the rib. The pre-programmed Smart Choice
menu is going to cook this to an internal temperature of 140 degrees. My favorite thing
about cooking prime rib in the ComboChef oven is that I can prepare and cook it overnight,
and then have it hold at a precise temperature. The meat comes out juicy and perfect every
time.
