On behalf of Expert Village my name is Elizabeth Muller and today we're making Chicken Fricassee
Spanish Style. Our chicken has been boiling for a while. I would say about a good ten
minutes. Before I place the other items I want to go ahead and let it cook down a little
bit. OK, so it looks something like this. It's boiling away, that's fine, I'll just
move it around just a little bit. OK, it's going to cook pretty fast but before I do
that, I said I wanted to place my olives and my peas in there and then I'm going to pour
my cooking wine. So, I'm going to go ahead and use these small olives. You can use larger
olives and cut them up. I like to use these or you can actually take the small olives
and cut them in half. I like to use the whole olive but some people just cut them, want
the pieces in there. I actually take and put a few in there like this. I like my olives
whole and I don't mind if the actual juices from the olives fall in there. It just makes
it a little bit more flavorful. A couple of more should go in there.
