Today we're baking what I call Baileys Cupcakes for St. Patrick's Day.
Here's what you need:
1 Duncan Hines Classic White Cake Mix
3 Large Egg Whites
1/2 cup Butter, melted
1 cup Bailey's Irish Creme Liqueur
Green Food Coloring
Duncan Hines Home-Style Cream Cheese Frosting
Baking Cups and a Muffin Pan
At this point, preheat your oven to 350 degrees F.
To a mixing bowl, add your cake mix
melted butter
your egg whites
and the Baileys Irish Cream.
You'll want to mix this for 1 minute on low speed and another minute on high.
Use a splash guard if you have one available.
Put baking cups inside each space of your muffin pan.
This recipe actually yields 24 cupcakes, but for this video I will show the preparation
of only six.
The Bailys liqueur makes this batter very thick.
You need to fill the cups about two-thirds of the way full.
Bake in the oven at 350 degrees F for 18-20 minutes.
When ready, take them out of the oven and let them cool for at least 10 minutes.
To make the frosting, simply mix in 2 drops of green food coloring in with the Duncan
Hines frosting.
Don't overmix. You want to see the different colors.
It gives it a lighter, spring green look.
Then, frost the cupcakes.
Be as creative as you want... You could add sprinkles on top and shamrock-shaped toothpicks
in the center as decoration.
We'll that's it.
As you can see this was really easy to prepare and they taste great.
