How To Sharpen Your Knives Hi, I'm Ken Woodley of Steel On Stone.
When I get a knife I want to make the edges on both sides equal at a certain degree. This
Machine helps me.Then I set my angle using this. I have a ten inch stone here. And that
is exactly dead on. Twenty Two and a half.It's a boning knife so it needs more of an edge
than a slicer.So now I can start my machine wich has a continuous water and it cools this
ten inch grinding stone. and it cools it because when you take a blade and put it on a stone
it will heat up very quickly and if you heat it up very quickly. it loses it's temper it
becomes brittle it won't hold an edge so by running the grindstone in a bath aof water
it keeps the knife very cool and all the little debris away from it. I originally make three
passes and ithen I feel for the burr. when I sharpen one side the other side will develop
a burr. Little bits of metal. That's not quite there yet. There it is.
So you want that burr. I do, because that tells e that angle is there
and all the way where I want it. And then I can flip it over and get the same exact
angle on this side. To make it sharp I have to remove the burr.
The burr tells you your angle is right. And this is the second step. This is a leather
wheel and on it is compound. Jeweler's rouge. And it takes all that little burr which is
a bit of metal off and it polishes the blade. In between sharpenings you can use a strap
just like the old time barbers used to use except this is leather on a piece of wood
and you keep your angle that you just sharpened it at. And after use what
it does when you use a blade is it curls. When you use a strap it will straighten it
and polish the edge so it will remove all the serrations. And
I almost cut my finger off.
